How to eat it

  1. First, open the tube

Every tube is sealed, so ten rolls travel in a bag, a car or a pocket without moving.

  2. Then pull out the stick

The stick inside is filled with the sauce you picked. It is also the plunger.

A clear stick full of soy sauce, a drop falling from its tip
  3. Pour it in

Empty the sauce into the tube. An absorbent pad at the bottom keeps it from leaking.

  4. Push from the bottom

Put the stick in from below and push. One piece comes up at a time.

  5. Eat as you walk

On the street, at your desk, in the car. Bite, push, bite again.

  6. Bring the parts back

Return the reusable parts to the store for a discount on your next tube. The tube itself is biodegradable cardboard.

We saw a reel of sushi in a tube one night and started working on it before we went to sleep. The name came out of a forty-minute brainstorm that same night.

Our first counter was three metres by two, under a staircase in Palermo. Less than four months after the idea, people were queueing on Honduras street.

We asked people on the street when they eat sushi. Almost everyone said at night, sitting down, on a date. We wanted it to be something you eat walking, at noon, on the way somewhere.

We never wanted people to say they ate sushi in a tube. We wanted them to say they had a Pushi.

Now we are taking it to the United States. See you in Miami.
